Description

White spelled flour from Celnat belongs to the same botanical genre as wheat and is an old variety. Its composition is close to that of common wheat. Spelled was the staple food of the Romans who called it "farrum". It was his name that later gave the words "far" and "flour". Large spelled is a resistant cereal from a dry, mountainous area with a harsh climate. The envelope of its grains is particularly thick and serves as protection. Thanks to this robustness and this little requirement. Semi-complete flour is a good compromise between nutritive and sensory qualities (little typed dough). It is a source of fiber and protein. This flour will advantageously be baked with sourdough: acidification of the dough for better assimilation of minerals. This spelled flour will replace traditional wheat flour. It can be used in the same way and will allow you to make delicious rustic breads but also pancakes, pancakes, waffles, cookies, dough for pie or pizza ... Possible traces of soy, nuts, sesame.
